Gastronomy training in Przno - I module

CSTI has held the first four days of training workshops for members of the Ethno-Gastronomic Heritage route around Lake Skadar. This engaging workshop was held at the Hotel Education Center (HEC) at Hotel Residence in Milocer, a venue well known for its excellent faculty, curriculum, and service in hospitality. The Hotel Education Center is both a training center and a four star hotel located on Montenegro's central coast near the famous Sveti Stefan resort.

The training program was divided into two sessions - the first two days were allotted for individual producers of wine, brandy, honey, oil, and other specialties around Lake Skadar while the following two days were devoted to owners of restaurants and small konobas. A total of 40 individuals attended this successful and engaging event.  

During the intensive, full day workshops participants learned valuable lessons about presentation, food preservation, cooking techniques, and smoking/drying methods. They also acquired recipes and tips for making sweets such as those with chestnut and chestnut cream, and for traditional cakes such as "patispanj." Other topics included food and wine pairings and tips for degustation.

In addition to these lessons in the kitchen, attendees learned how to expand, market, and improve their business during feedback sessions with the hotel owner, a successful entrepreneur and former chef.

Participants will return to the HEC Center in a couple weeks for four more days of training, and a press event which will highlight the project, producers, and the cookbook to be formulated from the trainings.

Overall the workshop was a great success which will help stakeholders as they prepare themselves for involvement in the Ethno-Gastronomic Heritage route, a joint cooperation project which will showcase the excellent regional cuisine, interesting historical and cultural assets, and high quality specialty products of the Skadar Lake region.
